
Ingredients
- 750g Pumpkin
- Silken Tofu
- 1 jar Laksa Paste
- Bunch of Brocollini
- 2 cans Coconut Milk
- 2 tsp Vegan Fish Sauce
- 2 cups Vegetable Stock
- Handful Coriander
- 1 Red Chilli
- 2 Spring Onions
- 1 packet Cooked Thin Noodles of choice.
Method
- Add jar of laksa to saucepan simmer on high heat for 1 min.
- Add 2 cans of coconut milk and 2 tsp of vegan fish sauce. And bring to the boil.
- Add 750g cubed pumpkin and cook for 10 minutes.
- Add broccolini and cook for 5 mins.
- Serve laksa over cooked noodles, placing silken tofu cubes on top.
- Garnish with coriander, spring onions and chilli. Serves 4.
