
Ingredients
- 2 large zucchini
- 12 prawn cutlets
- 2 clove garlic, minced
- 2 spring onions, minced
- ½ teasp minced ginger
- 2 teasp Squid fish sauce
- 1/2 teaspoon chicken stock powder
- ½ teasp sugar
- ½ teaspoon white pepper
- ½ red chillie, minced (optional)
Method
- Cut 3 cylinders from the centre of each zucchini about 3 cm long each. Remove centres to form 6 rings.
- Cut prawn in half so that the tail has 2 cm of prawn meat attached. Set tails aside and mince rest of prawn.
- Mince 3 of the zucchini centres and mix with prawn mince, garlic, spring onions, ginger, fish sauce, stock powder, sugar, pepper and chillie if using.
- Place 2 tails inside each zucchini and stuff with prawn mince mixture. Steam 10 mins.
