Ingredients
- Valcom Red Curry Paste 2tbsp
- 1 Can Coconut Milk
- Crushed Garlic 1tsp
- Crushed ginger 1 tsp
- Broccoli
- Lebanese Eggplant
- 1 can bamboo shoots
- Cooked Prawns
- Lemon Juice 1 tsp
- Fish sauce 1 tsp
- Brown Sugar 1tbsp
- Lemon Grass paste 1 tbsp
Method
- Heat oil in frying pan. Add curry paste, ginger and garlic for about 30 seconds
- Add coconut milk, lemon grass paste, sugar and let simmer for about 5min
- Add vegetables and cook for about 5min.
- Stir in prawns for about 1 minute. Take off heat and stir in fish sauce and lemon juice. Serve with rice
