
Ingredients
- 20 x Prawns
- Bunch of Corriander
- 2 cups Chicken stock
- 400ml Coconut milk
- 1 x Red Chilli
- 2 x Kaffir lime leaves
- 1tbl Fish sauce
- 1 x Lime juice
- 500g Vermicelli noodles
- 1 cup Bean sprout
- 100g snow peas
Method
- Heat oil in large pan on high. Fry laksa paste for 1 min. Blend in stock, coconut milk, Chilli and lime leaves. Bring to boil, reduce heat to low until slightly thickened.
- Place noodles in bowl, pour boiling water and soak for five mins until tender. Drain when ready.
- Add prawns, snow peas, fish sauce, and lime juice to Laksa. Simmer for 3 to 4 mins until prawns cooked through.
- Divide noodles among serving bowls. Spoon in laksa, top with sprouts and coriander. Serve immediately.
