
Ingredients
- 200g dried rice noodles
- Ayam Thai Laksa Paste
- 400g frozen peeled green prawns, thawed
- 1 bunch broccolini, trimmed
- 1 cup bean sprouts
- 2 fresh red chilli
- 1 375 ml can coconut milk
- 1 lime, chilli flakes
Method
- Place noodles into bowl, cover with boiling water (kettle) until soft. Stir to separate noodles.
- Place wok onto heat, empty Laksa paste contents and stir until aromatic. Add small dose of chilli to bring some heat, add coconut milk and bring to boil. Turn down the heat and allow to simmer.
- Add prawns and broccolini until cooked through (broccolini to be crunchy)
- Place drained noodles into the centre of the bowl. Once prawns laksa ready, ladel sauce onto noodles, place prawns and broccolini on. Top with bean sprouts $ more chilli. Squeeze lime all over, sprinkle chilli flakes depending on heat preference.
