- ** Ingredients for Prawn Patties:
- 15 large prawns, peeled and deveined
- 1 spring onion, finely sliced
- Pinch of salt and ground white pepper
- 2 tbsp all-purpose flour
- 1 tbsp water
- ** Ingredients for Breading:
- 1/2 cup Obento Panko Breadcrumbs
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- ** Ingredients for Slaw:
- 100 g finely shredded slaw mix
- 1/4 cup Kewpie Sriracha Mayonnaise
- 1 tbsp dijon mustard
- ** Ingredients for Assembly:
- 2 brioche burger buns
- 2 slices Jarlsberg cheese
Method
- Preheat air fryer to 180°C. Spread the breadcrumbs in a tray and give a light spray of oil. Bake for around 5 minutes until golden, then transfer to a shallow bowl.
- Dice one third of the prawns and finely process the remaining prawns in a food processor. Transfer all prawns to a medium bowl. Mix in spring onions, a pinch of salt and pepper. Add flour and water, then combine. Using a spatula and spoon, divide and shape the mixture into 2 even patties. Place patties on a piece of oiled baking paper, cover with cling wrap and chill for 1 hour.
- Prepare the flour, egg, and breadcrumbs in 3 separate shallow bowls. Carefully coat each patty with flour, shaking off any excess. Dip in egg and cover with toasted breadcrumbs.
- To cook the patties, spray both sides with some oil and place in the air fryer basket. Bake at 200°C for 15 minutes, flipping the patties halfway through.
- Meanwhile, place the brioche buns cut side down into a frypan and toast for 1 minute over high heat. Remove and top the bottom half with cheese. Add the patties, then a handful of slaw and a good drizzle of the dressing. Serve with fries and enjoy!
