
Ingredients
- ½ kg cooked shelled prawns
- ½ kg cooked white fish
- 1 tbsp Thai red curry paste
- 1 egg
- 1 tbs cornflour
- 1 tsp sugar
- 1 tbsp fish sauce
- 2 tsp salt
- A few green beans chopped into small pieces
- 2 shallots chopped finely
- Chilli flakes or chopped fresh chilli to taste
- Any salad to your own preference.
- Lime cut in half
- Sesame seeds
Method
- Blend prawns and fish in blender till combined and smoothish.
- Transfer to large bowl and mix in remaining ingredients except the salad and lime.
- Shape into small Pattie’s and push into sesame seeds on one side.
- Deep fry in hot oil or in frypan until brown. Drain on cooling rack.
- Very tasty and crispy when hot, but I like them in a lunchbox on salad with lime juice squeezed over the top and chillie flakes.
