
Ingredients
- 1 tablespoon Valcom Authentic Thai YELLOW Curry Paste
- 1 tablespoon Valcom Authentic Thai LAKSA Soup Paste
- 8 diced Baby Potatoes
- 8 florets Caulifower
- Tablespoon Extra Virgin Olive Oil
- 12 slices of Red Onion
- 4 crushed Garlic cloves
- 2 leaves of chopped Green Cabbage
- 18 sliced Golden Tomatoes
- 30 Cooked Prawns (tail off)
- 8 sliced Mushrooms
- 180ml Coconut Milk
- Salt, Black Pepper and Chilli seeds to taste
- 1 tablespoon bown sugar
- 1 tablespoon Continental Parsley
- 4 stems Coriander
- 1 x sliced Mini Red Chilli
Method
- - Steam potato and caulifower until firm soft
- - In a wok… warm oil and slightly brown red onion then add garlic
- - At intervals… add chopped green cabbage, yellow curry paste then golden tomatoes
- - Add prawns, mushrooms, coconut milk and brown sugar then cook for 5 minutes, add potatoes, caulifower, parsley and some salt, pepper and chilli seeds to taste
- - Garnish with coriander, chilli slices, black pepper and chilli seeds
- - Serve and enjoy!
