
Ingredients
- Potato (3)
- Lebanese Cucumber (1)
- Carrot (1/2)
- Brown onion (1/2)
- Kewpie Mayonaise (alot)
- Sugar (1 tablespoon)
- White vinegar (1 table spoon)
- Salt (sparingly or at own preference)
- Pepper (sparingly or at own preference)
- Mini tomatoes (about 10)
Method
- Peel potatoes and cut in halfPeel carrot
- Bring pot of water to boil and boil potatoes until becoming soft enough to make in to mash
- Cut the half onion in to slices, then place in to a bowl and place it in to a microwaveable bowl, wrap it and microwave at 1000w for 1min and a half. Remove from microwave and let it cool.
- While the potatoes are on the boil cur the carrot in half along the length of the carrot then half again so each slice looks triangular. Then thinly slice the carrot in to 2mm slices.
- While potatoes are on the boil, take your cucumber and cut off the ends. Then very thinly slice your cucumber. Add the cucumber slices to a small bowl, and sprinkle approx 2 tea spoons of salt. Lightly massage the sat in to the cucumber slices. This will start removing the water from the cucumbers. Leave the cucumbers to absorb the salt for approx 10-15 mins, then squeeze excess water from the cucumbers by hand by squeezing the cucumber slices in your hands and dripping the fluid out. Then place the squeezed cucumber slices aside.
- Cut up the mini tomatoes in to halves or quarters, whichever is your preference.
- Remove potatoes from the boil and in to a large bowl to mash. If possible, use a second larger bowl filled with ice to rest the bowl with the potatoes in it. This way you can chill the potatoes while mashing it, as the potato salad is best served cold. Add the sugar, vinegar, salt and pepper to the potatoes and then mash the potatoes until it becomes a smooth consistency.
- Add the onions, squeezed cucumber slices, carrots And mini tomatoes in to the mash potatoes.
- Squeeze a generous amount of Kewpie Mayonaise over the combined ingredients (approx 50g - 70g) and then mix all the ingredients together until there is even coverage.
- The salad is now ready to be served or can be placed in the fridge to be further chilled and eaten for later.
