
Ingredients
- 2 tblspns peanut oil
- 1 brown onion, finely chopped
- 3 cloves garlic, crushed
- 6 shallots (green onions), finely chopped
- 500g lean pork mince
- 2 tblspns oyster sauce
- 120g green beans, topped & tailed and sliced into 1-2cm lengths
- 2-3 large dried wood-ear mushrooms (Chinese black fungus), soaked until soft, woody parts removed & finely sliced
- 1 x 236g can Valcom sliced water chestnuts
Method
- Heat oil in a wok over medium heat. Add the onion, garlic and shallots & cook until soft.
- Increase the heat, add the pork and stir-fry until cooked, breaking up any lumps. Season with salt and pepper.
- Reduce the heat and add the mushrooms, beans and water chestnuts. Stir-fry 2-3 minutes.
- Mix the oyster sauce with 1/4 cup water and pour over the pork mixture. Stir until combined. Serve in lettuce cups.
