
Ingredients
- 1kg pork belly
- 2ltrs pre made ramen broth
- 1 yaki nori sheet
- 20g toasted sesame seeds
- 2 baby bok choy
- 4 pre made soy eggs
- 2 sticks spring onions
- 4 broccoli florets halved
- 1 tsp togarashi
- 400g ramen noodles
- A few drops sesame oil
Method
- Score and salt pork belly skin. Cook pork belly at 160 degrees for 1.5hrs. Turn heat up to 250 degrees for further 30min. Rest for 30mins.
- While pork is resting, bring broth to boil and simmer for a couple minutes. Bring a pot of water to boil. Add noodles and halved broccoli florets for 2-3 minutes. Adding quartered bok choy for final 30 seconds. Quarter nori sheet and place one square on the side of each bowl. Strain and portion noodles and veg between bowls. Top each bowl with sliced pork belly. Pour over desired amount of broth, and divide eggs, sesame seeds, sliced shallots and tagaroshi between bowls. Finally finishing with a few drops of sesame oil.
