
Ingredients
- One carrot5 radishes1 lebanese cucumber1 cup of short grained rice1 Avocado1 tablespoon of sesame seeds
- 1 tablespoon Obento rice wine vinegar2 tablespoons of Kewpie soy sesame dressingVegan aioli (Coles)1 garlic clove
Method
- Boil two cups of water in the kettle, add to saucepan and then add one cup of rice. Simmer for 15 minutes or until ready.
- Finally chop the radish, cucumber and carrot (into long strips) and soak in rice vinegar, garlic and sesame soy dressing.
- Slice the avocado and roll in sesame seeds.
- Drain the rice and use a round serving spoon to create a round serve of rice in a bowl.
- Drain the vegetables slightly and place around the rice. Top the rice with avocado.
- Drizzle with vegan aioli and more sesame soy dressing as required.
