
Ingredients
- 1 cup Obento Rice Wine Vinegar
- 1 cup Water
- 40grms Castor Sugar
- Peppercorns
- Yellow Mustard Seeds
- Bay Leaf
- Coriander Seeds
- I Tablespoon Sea Salt
- 3 Red Onions, sliced thinly on a mandolin.
Method
- Combine Obento Rice Vinegar, Water, Sugar and Salt in a small saucepan. Bring to the boil stirring until sugar and salt are dissolved.
- Place spices and onions into a sterilised jar and pour over the liquid. Allow to cool before storing in refrigerator.
- Will keep in the refrigerator for up to two weeks.
