
Ingredients
- 250 grams chicken breast diced
- 1 sweet potato diced
- 1/2 jar Valcom Penaeng Sauce
- 1/2 can Valcom Coconut Cream
- 1ts Squid Fish Sauce
- 1 clove garlic
- chopped coriander and lime wedges to serve
- 1 cup Jasmin Rice.
- 2TBLS oil.
Method
- Cook Jasmin Rice set aside and keep warm.
- Heat oil in heavy pan add diced chicken , diced sweet potato, garlic diced, Squid fish sauce and Penaeng Curry Paste . Cook for a couple of minutes and slowly add Valcom Coconut Cream..
- Serve Curry over cooked rice with a sprinkle of coriander and lime wedges.
- Note Sweet potato can be microwaved for 3 minutes before adding to curry .
