
Ingredients
- * Ingredients:* 1 cup of pre-cooked Short grain rice* 3 tbsp rice vinegar * 1 tsp sugar* Pinch salt* 1 x Nori seaweed sheets. * 1/4cup chopped roasted peanuts* 1/4 small carrot grated* 1/4 avocado sliced lengthways* 1 Spring onion stalk * 5 cooked peeled prawns * 1 tbsp Kewpie Mayo* 1/4 tsp sriracha
Method
- To make sushi:* Heat rice vinegar for for 15 seconds in the microwave then mix in sugar and salt until dissolved. * Heat up the precooked short grain rice in the microwave until steaming. * Spread in a wide dish and drizzle sushi vinegar over rice and mix through. Set aside to cool to room temperature. * Lay nori sheet, rough side up, onto a bamboo roll mat. Spread rice over 2/3 of the sheet* Mix kewpie and sriracha sauce * On top of rice lay prawns, grated carrot, cucumber, avocado, spring onion and chopped peanuts and spicy kewpie along the length. * Roll sushi tightly and wipe a little water over the edge of the nori sheet to seal* Enjoy!
