
Ingredients
- Kewpie Roasted Sesame Dressing
- 2 chicken breasts
- 1/2 cup panko crumbs
- 1/4 cup grated parmesan cheese
- salt & pepper
- 1/4 red cabbage, shredded
- 1/4 white cabbage, shredded
- 1 carrot, julienned
- 2 peaches, sliced
- handful of coriander leaves
- handful of mint leaves
- 2 spring onions, sliced
- 1 tbs crushed peanuts
- 1 tbs pepitas
- 1 tbs toasted sesame seeds
Method
- Butterfly chicken breasts all the way through to make even sized fillets.
- Coat the chicken fillets in Kewpie Roasted Sesame Dressing.
- Place panko crumbs, parmesan cheese and a grind of salt and pepper in a shallow bowl and mix.
- Place chicken pieces one at a time in the crumb mixture and press down. Repeat on both sides of chicken fillet. Repeat for remaining fillets.
- Cook chicken fillets in air fryer at 200 degrees celsius for 10 minutes.
- While chicken is cooking, prepare the coleslaw by combining cabbage, carrot, peaches, coriander, mint, spring onions, crushed peanuts, pepitas and half of the sesame seeds in a large bowl. Add some Kewpie Roasted Sesame Dressing and toss.
- Serve chicken alongside coleslaw and Kewpie Roasted Sesame Dressing for dipping. Sprinkle with remaining sesame seeds. Enjoy!
