
Ingredients
- 100gm white fish (cubed 2 x 2 cm)
- 1 knob ginger, grated
- 1 cup of coconut cream
- 1 tablespoon of fish sauce
- 1 kaffir lime leaf, finely sliced
- salad - we did a pawpaw salad with peanuts, cucumber slices, carrot matchsticks, steamed snake beans and lime wedges - but add what you love and make it colourful!
- steamed rice
- toothpicks, soaked in water
- ~ 10 clean pandan leaves
- Ponzu dipping sauce
Method
- Cube fish (~2x2 cm) and marinate in fish sauce, coconut cream, and ginger for 5 minutes (or longer if you have time).
- Soak toothpicks in a bowl of water for 5 min (or longer if you have time).
- Wrap the fish in washed pandan leaf and secure with a toothpick.
- Air fry at 180 degrees for 8 minutes
- Add salad, dipping sauce, and accompaniments (we made paw paw salad with peanuts, cucumber slices, carrot matchsticks, and steamed snake beans). Steamed rice and fresh lime wedges are suggested, but add what you love and make it colourful!
