
Ingredients
- 460 grams skinless Tasmanian Salmon Fillets
- 2 cups Medium grain rice or Sushi rice
- 100g Shelled Edamame beans
- 1/4 Red Cabbage
- 1 large Carrot
- 1 Corn Cob
- 150g Cherry or Solanato tomatoes
- 1 Ripe Avocado
- 1/2 small Cucumber
- 3/4 Red Capsicum
- 100g Snow Peas or Sugar Snap Peas
- 2 tbl spoons Olive Oil
- Kewpie Sesame Soy Dressing
- Kewpie Roasted Sesame Dressing
Method
- Place the rice in a rice cooker to cook before commencing vegetable preparation as this will take the most time.
- Gather your preferred vegetables for the salad component and assemble on a large chopping board: We used a quarter of a red cabbage finely sliced or shredded. Grate the carrot. Slice the corn kernels off the cob so they become separated. Cut the tomatoes in half along with the snow peas or snap peas. Slice the capsicum, cucumber and avocado in to manageable mouth sized pieces.
- About half way through the cooking of the rice, you can commence the salmon preparation and cooking: Season one side of each salmon fillet with salt and pepper.
- Place a large fry pan on a moderate to high burner or element on the stove top.
- Drizzle a small amount of olive oil on the pan, enough to just coat it, and then allow a minute for the oil to come up to temperature (but do not allow it to smoke).
- Add the salmon to the pan, seasoned side down. Go ahead and season the now top side of the salmon in the pan. Depending on the thickness of salmon, allow around 3-4 minutes to cook through before turning and cooking for a further 3-4 minutes on the other side.
- Remove salmon from the pan and allow to rest for 2 minutes on kitchen towel on a plate. A perfect fillet is slightly pink in the middle but with supremely delicious crispy edges.
- Assemble the Poke Bowl: Place a large scoop of rice to one side of a bowl. Place all of your favourite prepared vegetables on the other side. Place your salmon fillet atop the rice before drizzling both Kewpie Roasted Sesame AND Kewpie Sesame Soy dressing over the entire bowl. Grab a fork and enjoy.
