
Ingredients
- Fresh wide rice noodles - 0.5 Kg
- Chinese broccoli (Gailan) - 1 bunch
- Eggs - 2 large
- Garlic - 3 cloves
- Oyster Sauce - 1 Tbs
- ABC Sweet Soy Sauce - 2 Tbs
- Palm Sugar - 20g
- White pepper - 1 pinch
- Vegetable oil - 4 tbs
- Lime - 1 unit
- Coriander - 1/4 bunch
- Fried shallots - 1 tbs
- Salt - To taste
Method
- Cut the gailan two ways. Slice the stems with an angle, the green leafy part keep relatively large as they will wilt like spinach.
- Chop the garlic small.
- Separate the noodles so they are not too stuck to each other. Fresh noodles should feel relatively soft and separate easily.If they are a bit older and stuck together, a few second in the microwave at a time can help to soften them up.
- Pick the coiander and put aside for garnish. Also cut the lime into wedges and keep for later.
- Turn the heat on high and get your wok or pan as hot as possible with the oil.
- Once the oil is hot add your garlic in for about 10 seconds stirring well.
- Add your gailan stems and stir fry them for about 30 seconds.
- Once you can see the gailan softening up and developing some nice colours add your noodles.
- You will notice that the noodles start to soften up with the heat. After 2-3 minutes of occasional stirring, add your sauces and the sugar in and keep stirring. Make sure that the noodles are all well coated.If your noodles are still looking a bit pale, feel free to add more ABC sauce.
- Move your noodles to the side and add one more spoon of oil in the pan and drop your eggs in. Stir the eggs a bit so the yolks break and spreads the eggs over the oil. Depending on the heat of your pan you want to stir your eggs in about 30 seconds to a minute. You want to reach a scramble consistency but not too runny. Give everything a good stir so the eggs and the noddles mix well.
- Add your gailan leaves as well as salt and pepper to taste in and give everything another good stir until they gailan leaves wilt.
- Taste and add more seasoning according to your taste and you are good to go.
- Place in your serving bowl and garnish with your picked coriander leaves. fried shallots a lime wedge and enjoy!
