
Ingredients
- Flat rice noodles
- Coriander
- Fresh lime
- ABC Soy Sauce
- Krachai
- Green peppercorn
- Sriracha sauce
- Canola oil
- Gailan (chinese broccoli)
- Spring Onion
- Garlic
- Red chilli
- Oyster sauce
- Fried shallots
Method
- Soak the rice noodles for at least 4 hours or overnight
- Drain well the noodles by letting them sit in a strainer for at least 10 minutes.
- Cut the gailan stems with a slight angle and keep the leaves separate.
- Chop your garlic thinly and slice the red chilli.
- Pick coriander leaves, cut lime into wedges and place aside for garnish.
- Place the pan over a medium heat and add the garlic and red chilli stirring frequently. After 20 seconds add the gailan stems, increase the heat to high and keep stirring every 20-30 seconds.
- After the gailan starts gets some golden, add in the noodles, the krachai and the peppercorns and keep stirring.
- Next you add your wet ingredients (ABC sauce, Sriracha and oyster sauce) and keep stirring. The noodles will cook in the sauce in 2-3 minutes on high heat. Keep an eye on the consistency and flavour to adjust seasoning as needed. Then you add your gailan leaves and let them finish cooking with the residual heat in the pan.
- Turn the heat off and plate your noodles up. Garnish with coriander, lime and fry shallots.
