
Ingredients
- 700g chicken mince
- Thai chillies halved, to taste
- 6 garlic cloves minced
- 2cm ginger minced
- Vegetable oil 1/4 cup
- Spring onion 3 sprigs, sliced
- 1 carrot sliced
- 1 red capsicum sliced
- Green beans two handfuls, sliced
- Mushrooms sliced, 1 cup
- Thai basil leaves, large handful
- ABC Kecap Manis, 1/2 cup
- Squid brand Fish Sauce, 1/4 cup
- Sriracha, 1/4 cup
- White vinegar, 3 tablespoons
- Egg fried
Method
- Brown chicken mince in the vegetable oil, stirring and breaking into small chunks
- Add minced garlic, ginger, thai chillies, and spring onion. Sautee for a minute.
- Add kecap manis, sriracha, fish sauce and vinegar. Stir.
- Add vegetables and stir fry for 3-4 minutes.
- Turn off the heat, and add basil leaves.
- Serve with jasmine rice and and a fried egg on top.
