
Ingredients
- * 1/2 jar Volcom Panaeng Curry Paste (210g jar)
- * 1 large onion
- * 700g pumpkin, cut into 4cm cubes
- * 400g firm tofu
- * 500g frozen peas, carrots, corn & beans
- * 400ml coconut milk
- * 1 tbsp olive oil
- * 1 tsp sugar
- * 1 tbsp fish sauce
- * 3 Kaffir lime leaves
Method
- Sauté onions & curry paste in oil
- Add water & pumpkin. Stir & cook on medium heat for 5 minutes
- Add tofu, stir & cook on low heat for 5 minutes
- Add coconut milk, fish sauce & sugar. Stir & simmer for 5 minutes
- Add rice noodles & frozen vegetables. Stir & simmer for 5-10 minutes
- Sit for 5 minutes
