
Ingredients
- 1.5kg oyster blade steak
- 5 potatoes chopped
- 1 onion finely chopped
- 1 jar valcom massaman curry paste
- 3 cloves garlic
- 1 cinnamon stick
- 3 star anise
- 2 tsp cumin powder
- 1 tsp garam masarla
- 1 tsp ground coriander
- 2 tsp grated ginger
- 2 kaffir lime leaves
- 1 tbsp palm sugar
- 2 x 400ml coconut milk
- 1/2 cup cashews
- 2 tbsp ground cashews
- 1 red chili thinly sliced
- Fresh coriander to garnish
Method
- Brown meat in casserole pot.
- Add chopped onion and cook until onion is transparent.
- Add garlic, ginger and spices. Cook for 2 minutes.
- Add full jar of valcom massaman curry paste, kaffir lime leaves, palm sugar and coconut milk. Cook for 1.5 hours or until meat is tender.
- Add potatoes and cook for further 45 minutes until potatoes are tender. Add extra water if needed.
- Add chilli and cashew. Cook for further 5 minutes. Server with coriander and crushed cashews.
