
Ingredients
- Golden curry mix (half a tray)
- Hot pot egg noodles (two sections)
- Olive oil
- 1/2 onion
- 1/2 small-medium sweet potato
- 1 zucchini
- 1 carrot
- Splash of red wine
Method
- Heat up pan with a dash of olive oil (medium-high heat)
- Add chopped onions to soften
- Add other veggies (zucchini, carrot, sweet potato)
- Add water to pan to cover ingredients, then add the golden curry mix and a splash of red wine
- Reduce heat to a simmer and wait for the sauce to thicken slightly
- Add noodles and follow their packet instructions to finish
