
Ingredients
- 500g frozen mussel meat
- 200g shredded cabbage
- 2 spring onions sliced
- 1 Tablespoon soy sauce
- 2 eggs
- 1 cup flour
- 1/2 cup of vegetable stock
Method
- Defrost mussel meat as per packet instructions (run under water 6-7 mins) then chop roughly or process in food processer.
- Whisk soy sauce, stock and egg together in a bowl. Add the flour and mix to make a batter - add more flour if needed, should be runny with no lumps
- Add cabbage , spring onions, mussel meat and mix
- Spray air fryer with rice bran oil
- Make small pancakes in air fryer using large spoon (can use egg rings to make perfect circles)
- Cook at 180 degrees for 8-10 minutes
- Serve with kewpie mayo
