
Ingredients
- 100 gr Okonomiyaki flour
- 100 ml Water
- 1 Whole egg
- 1/4 Green cabbabe
- 4-5 sprigs of Spring oninons (green and white)
- 300-400 gr Smoked bacon
- Pickled ginger strips
- Okonomiyaki sauce (Otafuku brand)
- Dried bonito flakes
- Kewpie mayonnaise
Method
- Mix 100 gr okonomiyaki flour, 100 ml water and 1 egg together and set aside. Try to over-mix.
- Cut the bacon intro strips and pre-fry to your desired texture and brownness. Take out of the pan and set aside.
- Cut the cabbage in very fine strips, the spring onion into fine pieces and add both to the batter mix (keep some spring onion aside for decoration). Add some of the ginger strips and combine loosely.Add the bacon to the mixture.
- Heat up a frying pan with some oil or the bacon fat from before on medium high heat. Scoop half of the okonomiyaki batter into a round shape in the centre of the pan. Cook the pancake for 3-4 minutes until the bottom is light brown. Flip the pancake over and cook for a further 3-4 minutes.Remove from the pan and keep warm while you cook the second pancake.
- Decorate with lashings of okonomiyaki sauce and Kewpie mayonnaise, sprinkle with bonito flakes, some of the pickled ginger and spring onion.Serve and enjoy.
