
Ingredients
- 1 cup of plain flour
- 1/2 a teaspoon of baking powder
- 3/4 a cup of vegetable stock
- 3 eggs
- 3 cups of shredded cabbage
- 100g of grated carrot
- 1/4 cup of sliced spring onions, plus extra to garnish
- vegetable oil
- Tonkatsu sauce
- Kewpie mayonnaise
- Nori furikake
- 1 tablespoon of soy sauce
Method
- Whisk the flour and baking powder in a large mixing bowl. Add the eggs, stock and soy sauce and whisk until smooth. Add the cabbage, carrot and spring onions and mix to combine.
- Heat 1 tablespoon of vegetable oil in a frying pan over medium heat. Add 1 cup of the batter and use a spatula to shape into a thick, round pancake. Cook for 3 minutes or until the underside is golden. Flip the pancake over. Cook for another 3 minutes or until cooked through. Repeat with the remaining batter in two more batches. Drizzle with tonkatsu sauce and kewpie mayonnaise, and garnish with spring onions and furikake.
