
Ingredients
- 500g of minced pork
- 1 onion finely chopped
- Canola oil for frying
- 270g of Hakubaku organic udon noodles
- 1/4 cup of miso paste
- 2 tablespoons of maple syrup
- 1/4 cup of rice wine vinegar
- 1 cup of beef stock
- 1 teaspoon of ginger finely chopped
- 1 clove of garlic finely chopped
- 2 spring onions finely chopped
- 1 cucumber sliced lengthwise
- 2 carrots sliced lengthwise
- 1 fresh chilli finely sliced (optional and not shown in picture)
Method
- Heat oil in frying pan then add onion, garlic, ginger and pork. Cook until pork is brown.
- Stir in miso paste, maple syrup, vinegar and beef stock. Simmer for 20 minutes or until sauce reaches desired viscosity.
- Prepare Hakubaku organic udon noodles as per packet instructions.
- Serve Hakubaku organic udon noodles in a bowl and top with cucumber, carrot and spring onion (and add chilli, if using).
