
Ingredients
- salmon fillet - 3 pieces
- Obento mirin seasoning - 2 tbsp for marinating, 50ml for cooking
- cherry tomatoes - 15, halved
- baby leaf spinach - 80g
- cooking cream - 150ml
- milk - 150 ml
- parmesan cheese - 2 handfuls
- garlic - 4 cloves
- lemon - 1 slice, cut into quarters
- Italian herb mix (optional)
Method
- Marinate salmon fillets with mirin, salt and pepper for at least one hour.
- Heat up a frying pan over medium heat and add in cooking oil. When the oil is heated up, place the salmon fillet with the skin side down. Fry the salmon filet for approximately 2 minutes.
- Turn the fillet onto its side, and fry it for another 2 minutes. Set aside once the surface turns golden brown.
- Fry the garlic and cherry tomatoes in the same pan, then add mirin over medium heat, and reserve 1/5 of the cherry tomatoes for plating.
- Switch to low heat, add milk and baby spinach, mix well. Add in cooking cream and Parmesan cheese, and sprinkle with salt and black pepper.
- Place the salmon fillets and cherry tomatoes in the pan, cook until the sauce becomes creamy, then add in lemon slices and Italian herb mix.
- Enjoy! You can eat it on its own or serve it with pasta.
