
Ingredients
- 400gm egg noodles or Obento ramen noodles
- 2 garlic cloves crushed
- 4 green onions (plus extra for serving) sliced
- 500gm chicken mince
- 200gm green beans (sliced)
- 2 cups (500ml) chicken stock
- 2 tablespoons Obento cooking Sake
- 1 long red chilli (half for serving) sliced
- Small bunch coriander (chopped)
- 1/4 cup of smooth peanut butter
- 1/4 cup of soy sauce
- 2 tablespoons Obento Tankatsu sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon chilli oil
- 1 tablespoon honey
- 2 teaspoons sesame oil
Method
- Cook noodles according to packet instructions and refresh with cold water, drain and set aside.
- Make peanut sauce by mixing together peanut butter, Tonkatsu sauce, soy sauce, hoisin sauce, chilli oil, sesame oil & honey in a bowl. * Can be made in advance.
- Heat wok and add half the peanut sauce, the garlic, red chilli and green onion and cook for 1 minute. Add the mince and brown for a few minutes before adding beans. Cook for a further 5 minutes until well browned. Mix through half the coriander.
- Put stock and OBento Cooking Sake in a small saucepan and heat. When hot add remaining peanut sauce and stir well until heated.
- To serve place a good ladle of peanut sauce broth in a bowl and add the noodles. Top with mince mixture and scatter with green onions, red chilli and coriander. Serves 2-4 people (depending if small or big meal)
- Serve with a chilled Riesling from Orange, NSW, a cool climate wine region, as great with all asian inspired food.
