
Ingredients
- 1/4 cup rice wine vinegar
- !/4 cup castor sugar
- 1 small chilli, thinly sliced
- 8 nectarines, cut into thin wedges
- 2 cucumbers, thinly sliced
- 1/2 cup roasted macadamias, coarsely chopped
- 1/2 cup mint, shredded
- 2 tablespoons olive oil
Method
- Place vinegar and sugar in saucepan on low heat. Stir for 5 mins or until sugar dissolves.
- Add chilli. Cool for 15 mins.
- Combine nectarines, cucumber, macadamias and mint in a bowl.
- Gradually add oil to vinegar mixture, whisking.
- Pour dressing over nectarine mixture and toss gently.Season with pepper and decorate with a sprig of mint.
