
Ingredients
- 1 Eggplant
- 3 tablespoons of Mirin
- 2 tablespoons of sake
- 1 tablespoon of sugar (can add more for level of sweetness)
- 2 tablespoons of red miso paste
- Chopped spring onions to garnish
- Roasted sesame seeds to garnish
Method
- Slice the eggplant into two long way.
- Score the eggplant diagonally
- Soak eggplant in cold water for 30 mins
- Take out eggplant and paper towel dry
- Preheat oven to 250c
- Place eggplant outside up in the oven middle rack
- Combine sake, mirin, red miso paste and sugar into a bowl
- Mix until a smooth paste
- Take eggplant out and brush miso paste onto the cut side eggplant. Brush the paste into the crevices of the eggplant for more flavour.
- Continue to ovenbake for 7 minutes or until toasted brown.
- Garnish with roasted sesame seeds and chopped spring onions.
- Serve as a side dish or with rice to your liking.
