
Ingredients
- 1 cup of jasmine rice
- 400ml can of Valcom premium coconut milk
- 1 pandan leaf
- 1 cup of water
- 400g of Fable mushroom ‘meat’
- 2 tbs Valcom massaman curry paste
- 2 eggs
- Sambal nasi lemak
- 1 tsp tamarind paste
- 1/2 tsp sugar
- Spring onion (used to garnish)
- 1 cucumber
- 1 carrot
- Butterfly pea flowers (optional)
- Roasted Peanuts
Method
- Place rice, 200ml coconut milk and water into pot and boil uncovered
- Once boiled, drop down to a shimmer for 20 minutes. Add pandan leaf into your pot
- Add a drizzle of oil to a pan and thrown in your mushroom meat, stir until slightly brown.
- Add the massaman curry paste and fry until oil appears.
- Add remaining coconut milk, tamarind paste, sugar and stir until thickened.
- (Optional) steep a few butterfly pea flowers in a small bowl with boiling water until blue colouring has leeched out. Add to your cooked rice.
- Chop carrot and cucumber to desired shape and fry your eggs.
- Serve up your massaman curry with the coconut rice and add your veggies, egg and top with Sambal and peanuts.
