
Ingredients
- 2kg uncooked and cleaned green lip mussels
- 1/2 jar Valcom red curry paste
- 1 bunch coriander, roots and stems finely chopped and leaves separated
- 400mL Valcom coconut milk
- 1 tbsp shaved palm sugar
- 1 tbsp fish sauce
- 1 tbsp olive oil
Method
- Heat a pan with oil over medium high heat. Add curry paste, coriander roots and stems. Cook until fragrant.
- Add coconut milk, palm sugar and fish sauce. Bring to the boil.
- Add mussels to the red curry sauce and cook for 10 mins or until all mussels have opened.
- Too with the coriander leaves, serve with steamed rice and enjoy.
