
Ingredients
- 1tsp red curry paste
- 1tbs oil of choice
- 1cup cooked rice
- 1/2 cup grated carrot or zucchini
- 2 eggs
- Fresh shallots chopped
- Dried shallots
- Sesame seeds
- Kewpie sriracha mayonnaise
Method
- In a frypan, at high heat, fry oil and red curry paste for 1min then add rice and grated vegetables. Fry for 4 min. Then plate on two plates as serves two.
- No need to clean frypan, fry two eggs. Place one fried egg on top of each rice.
- Top with, shallots, sesame seeds, and a generous amount of sriracha mayonnaise. Enjoy.
