
Ingredients
- X4 chicken thighs
- Valcom Yellow Thai curry Paste
- 1 onion
- Tbs fish sauce
- 1x continental stock pot
- Handful of beans
- Tbs garlic paste
- X2 carrots
- X3 potatoes
- 2 tsp sugar
- 2 cups jasmine rice
- Roti bread (optional)
Method
- 1. Slice onion & Cook in olive oil Add garlic (3-4 cloves) and the curry paste (half a bottle). Stir over low heat until aromatic
- Add half the coconut milk Add chicken and cook, keep stirring until lightly cooked.
- 6. Add remaining coconut milks and a good splashing of fish sauce/ sugar. Add chicken stock pot
- 8. Add veggies. Let it simmer for 5-10 mins
- Serve with cooked rice and roti bread
