- Mixed deli meats
- Rice
- Sesame oil
- Mushrooms
- 2 eggs
- Tonkatsu sauce
- Peas
- Abc sweet soy sauce
Method
- At a good European style delicatessen, buy a tub of mixed deli meat. Get a good mix of salamis & Italian meats of all types, preferably some bright red chili meats, & others peppered or herb infused.
- Prep the rice. Put a cupful of rice into double the normal amount of water in a rice cooker for 10 minutes. On a high heat, add some sesame oil to a pan, then toss the rice to remove the excess water. Put aside.
- Prep deli meat. Hand shred several handfuls of deli meat, using a sharp knife to thin slice thicker pieces. Put into another pan on low heat for several minutes then put aside. (in the oven is a good spot)
- Prep mushrooms. Wash 20 or so medium size mushrooms, then cook for 90 seconds in a microwave. Leave to cool, then rough slices into thirds.Pour excess mushroom juice over deli meat. Put mushrooms aside.
- Make omelette.Boil some water. Put teaspoon of tonkatsu sauce in a cup. Put a small amount of boiling water & dissolve the sauce. In a separate cup, crack & mix 2 eggs. Add eggs & sauce, pour into a frying pan & cook until almost crisp.Put onto a plate & put aside
- Prep peas. Put half a bowl of frozen peas into microwave for several minutes.
- During peas cooking time, get the egg & slice into strips down & across while on the plate.
- Put rice into warm frying pan then add & mix in peas. Dissolve some tonkatsu sauce in some hot water & add to the rice & peas. Fold in the mushrooms which should be very juicy into the pan as well.
- Add & fold in the deli meats bit by bit to get a good mix with the rice base.
- Stir well to get an even mix. Add the egg strips & stir for 30 seconds. Shake ABC sweet soy sauce over the dish & stir lightly.
- (optional) Serve with a fresh craft beer. I had an IPA.
