
Ingredients
- Capsicum sliced
- 4 cups shredded red cabbage
- 2 carrots grated
- Tsp minced garlic
- Tsp minced ginger
- Spring onions
- 1/2 tbsp honey
- Tbsp miso paste
- 70g Peanut butter
- Tbsp sriracha
- 180g pad Thai rice noodles dried
- 3 tbsp rice vinegar
- 2 tsp sesame oil
- 400g chicken breast
- Tbsp kecap manis
Method
- Heat tsp sesame oil and stir fry chicken. Remove.
- Heat tsp sesame oil and stirfry vegetables.
- Meanwhile cook noodle according to packet instructions.
- Combine sauces with peanut butter and miso paste.
- Return chicken to pan with noodles and sauce and stir fry to combine.
- If desired serve with coriander, crunchy noodles or crispy onions.
