
Ingredients
- Soba noodles
- Eggplant
- Red miso
- Mirin
- Sake
- Sugar
- Oil
- Sesame seeds
- Spring onion
- Snow peas
- Ginger
- Soy
- Rice vinegar
- Sesame oil
Method
- Cut eggplant in half & bake @ 180° for 20 mins
- Mix miso, mirin, sake & sugar. Brush 1/2 on to eggplant and bake for another 10 mins.
- Remove from oven and put remaining paste on and bake for another 10 mins (or until soft).
- Cook noodles according to packet instructions and add snow peas in steam basket on top.
- Turn oven to grill and grill until caramelised (about same time as noodles take to cook).
- Drain noodles, mix snow peas through and place in bowl. Mix ginger, soy, sesame oil, rice vinegar and sugar together and pour over noodles.
- Place eggplant on top and garnish with spring onions and sesame seeds.
