
Ingredients
- 60g of chicken
- 1/2 avocado
- 1 and 1/2 tbsp kimchi
- 1/4 tomato
- 120g coleslaw mix
- 2 tbsp greek yoghurt (optional)
- 1/2 cup rice wine vinegar
- 1 tbsp soy sauce
- 1/2 sesame oil
- Oil for cooking
- 1/4 cup Lee Kum Lee Honey and Soy stir fry sauce
- 1 serving of Hakubaku Organic Soba Noodles
Method
- Heat oil in pan and add chicken to cook for 5-7 minutes until golden.
- Add honey soy stir fry sauce to toss. Remove from pan.
- Meanwhile put to boil enough water to fill a pot and cook soba noodles (about 4 minutes). Drain and run with cold water.
- Mix in a bowl the coleslaw and drained soba noodles.
- Mix in a jug the rice wine vinegar, soy sauce and sesame oil.
- Slice tomato and avocado, and add them to a serving bowl with mixed soba noodles. Top with cooked honey soy chicken, kimchi and yoghurt (optional).
