
Ingredients
- Brown rice
- Onion
- Corn on the cob
- Baby broccoli
- Tomato
- Black beans
- Vegan mayonnaise
- Seasoning
- Vegan feta
- Red wine vinegar
- Salt and pepper
Method
- Cook rice for 27 minutes until tender
- Dice vegetables and drain the beans
- Pan fry vegetables with olive oil for 3 minutes
- Add beans with red wine vinegar for 4 minutes
- Make salsa with tomato and seasoning and salt and pepper
- Blend mayonnaise with chilli sauce.
- Divide rice, vegetable mixture and salsa among plates to serve. Top with spicy mayonnaise
