
Ingredients
- Valcom Massaman Curry Paste 210g
- 400ml Coconut Milk
- 400g diced beef
- 2tsp Tamarind Puree
- 1tsp fish sauce
- 1tsp sugar
- 2 cups cubed parboiled potato
- 1/2 cup roasted peanuts (optional)
- 2tbs oil
Method
- Stir fry 1/2 jar of Valcom Massaman Curry paste with 2 tbsp oil over low heat until fragrant
- Add half of coconut milk and stir fry for about 5 minutes or until sauce thickens and oil appears
- Add diced beef and stir fry over high heat for 2 minutes. Add remaining coconut milk, tamarind purée, fish sauce, sugar and bring to the boil
- Add parboiled potato. Bring to the boil and simmer on low heat until the potato softens
- Add 1/2 cup roasted peanuts (optional) before removing from heat. Serve with rice
