
Ingredients
- 500g beef mince
- Brown onion
- Egg
- Mixed herbs
- Red onion
- Butternut pumpkin
- 400ml coconut milk
- 1/3 cup Massaman curry paste
- 3/4 cup chicken stock
Method
- Add coconut milk, curry paste and chicken stock to baking dish. Stir.
- Mix beef mince, brown onion, egg and mixed herbs. Roll into approx 10 meatballs. Spread out in baking dish.
- Cut pumpkin in small cubes and spread in baking dish.
- Cut red onion into small wedges and spread out in baking dish.
- Bake for 45-60 minutes at 180 degrees.
