
Ingredients
- Valcom Masaman curry paste - half a jar
- Lean pork mince - 500g
- Red onion sliced - 1
- Minced or fresh ginger - 1 tablespoon
- Minced garlic cloves - 2
- Brown sugar - 1 tablespoon
- Fresh sliced or minced lemongrass - 1 tablespoon
- Green beans or snow peas or any other crunchy vegetable
- Fish sauce - 1 tablespoon
- Lime juice - 2 tablespoon
- Thai basil leaves (recipe also works without)
- Vermicilli
Method
- Add the onion, lemongrass, garlic and ginger to a wok on medium heat (use an oil of your preference) for 1min
- Add the pork mince and cook through
- Add the curry paste and cook for a further minute
- Add the lime juice, fish sauce, sugar and beans, and cook until the beans are ready. Turn off and stir through Thai basil.
- Serve over Vermicilli and garnish with some extra Thai basil.
