Ingredients
- Chuck beef 800g (cut into large chunks
- 2 white onions (cut into wedges)
- 4 Carrots (thick slice)
- 4 potatoes (quartered)
- 1 tin Masaman curry paste
- 2 tins Valcom coconut milk
- 2 tsp Brown sugar
- 2 teaspoons fish sauce
Method
- Brown off the beef with small amount oil, remove from pot
- Fry off the curry paste for few minutes
- Add onions and carrots
- Add 1.5 tins of coconut milk. Add the beef back into the pot
- Turn the heat down to simmer. Simmer on low with lid on for 60 mins or until meat soft and falls apart and veges tender.
- Add fish sauce and brown sugar to taste. Add extra half tin of coconut milk if desired.
