
Ingredients
- //TOFU STEAK MARINADE//400g Hard Tofu (cut in to 4 x 100g ‘steaks’)1 cup OBENTO Sushi & Sashimi soy sauce1/2 cup ABC Sweet soy sauce1/4 cup Sesame seed oil1 tbsp Squid Brand fish sauce2 garlic cloves, crushed/finely chopped1 long red chilli, deseeded and thinly sliced
- //NANAMI GUACOMOLE//1 Large Hass avocado1 1/2 tbsp HANAMI Japanese style chilli paste1/2 bunch of coriander, chopped1 lime/ juicedPinch of saltPinch of ground white pepper
- 200g Enoki mushrooms2 1/2 tbsp corn flour1l Vegetable/canola oilSat Pepper
- 1 small brown onion, peeled and cut in to half
Method
- In mixing bowl combine together - OBENTO soy sauce, ABC sweet soy sauce, sesame oil, fish sauce, garlic and chilli. Mix well and transfer in to container. Put the tofu steaks in this mix to marinade for at least 2 hours (the best overnight). Turn occasionally to allow both sides of the steak to be marinated.
- Cut avocado in two half and remove the seed. Scope the flash in to cup of the food processor. Chopped the coriander and add to the avocado as well as NANAMI chilli paste, salt and pepper. Blitz together. Check the seasoning and add more salt if needed. Transfer to piping bag and keep in the fridge until required.
- Wash enoki mushrooms, trim and dry by spreading on the paper towel. Transfer vegetable oil in heavy base sauce pan and put on the stove over medium heat. It takes about 10 min for the oil to reach the right temperature.
- Heat the skillet over medium/high heat. Add a little bit of the oil and pan fry tofu steak for about 3 min on each side. Add couple of tbsp of tofu marinade to the skillet and continue cooking for another 2-3 min on each side to let the steak caramelise. Add more marinade if needed.
- Add two half of the onion to the skillet there steaks are cooking. Let them fry until nice colour and caramelisation are reached. The time would vary and depends how big is the onion.
- Take the steaks and onions out and put on paper towels to get rid of access oil and rest.
- In medium size mixing bowl toss enoki mushrooms with corn flour making sure the mushrooms are nicely coated. Line the second medium size bowl with paper towel.
- Fry the enoki in the oil for about 30 sec to 1 min - until they reach golden colour. Scope mushrooms out with spider (spider web spoon). Season with salt.
- Slice the tofu steaks and place on the plates. Pipe large NANAMI guacamole dots on one side. Seperate the burnt onion shells and place one on each side of the tofu steak.
- Mix 1 tbsp of tofu marinade and 1tsp of NANAMI Japanese chilli sauce. Drizzle over the tofu steaks.
- Nicely place enoki fries on the top of the steaks. Garnish with micro herbs or any other suitable greens. I used baby rocket from my balcony garden. :)
- Serve immediately! Enjoy your meal!!!
