
Ingredients
- Crushed ginger
- Crushed garlic
- Sweet soy sauce
- Sesame oil
- Mirin
- Oyster sauce
- Pork
- Udon noodles
- Instant miso soup
- Pak choy
- Snow peas
- Eggs
- Nori
- Chilli (optional)
Method
- Combine 1 tbs each of garlic, ginger, seasame oil, oyster sauce and mirin with 1/3 cup of sweet soy sauce in a large container. Adjust to taste, add chilli if desired
- Add pork to marinade being sure to coat each piece generously. Cover and refrigerate over night
- Add instant miso and water to pot and bring to boil, add noodles and leave to simmer
- Soft boil 4 eggs and set aside in ice water to be peeled
- Fry pork in medium pan until crispy on the outside and juice runs clear
- Prepare pak choy and snow peas, wash and top and tail snow peas, wash and thickly slice pak choy long ways, halving longer pieces.
- Add snow peas and pak choy to bowl, add noodles and pour broth, lay pork, nori and egg on top and enjoy!
