- Onions
- Potatoes
- Baby sweetcorn
- Carrots
- Peas
- Rice
- Tomatoes
- Cucumber
- Egg
- S&B Golden Japanese Curry Mix Medium hot
Method
- Dice all veggies, fry onion and carrot for 3-5 mins then add peas, corn, potatoes and a cup of water, and simmer
- Meanwhile, cook rice per packet instructions and hard boil eggs.
- Add curry sauce cubes to bubbling veggie mix, and 500ml water, and simmer 5-10 mins.
- Spoon cooked rice onto plate, top with vegetable curry and garnish with sliced eggs, tomatoes and cucumber. Voila!
