
Ingredients
- 2 large Eggplant
- 2 tablespoons Red Miso Paste
- 1 tablespoon Obento Cooking Sake
- 1 tablespoon Obento Mirin Seasoning
- 1 tablespoon Olive Oil
- 2 tablespoons sugar
- Sesame Seed for garnish
Method
- Heat a pan up on high.
- Cut the Eggplants in half lengthways.
- Score the eggplants in a crisscross pattern carefully making sure you don't pierce through the skin.
- Mix all liquid in a bowl and add miso paste. Mix thoroughly and ensure that the sugar has dissolved and the miso paste has mixed through properly.
- Spray oil on pan.
- Place Eggplant skin side down for 4 minutes. Put lid on pan or aluminum foil and cover pan.
- Flip eggplant over and cook for a further 3 minutes. Cover with lid or aluminum foil.
- Generously spread paste over the scored eggplant.
- Put eggplant in oven for 6 minutes till paste has turned into a sticky icky bubbly gooey glaze.
- Sprinkle sesame seeds on top, be sure to serve and eat immediately while hot.
