
Ingredients
- 1x jar Valcom laksa paste
- 2 tbs Valcom red curry paste
- 1x tin Valcom coconut milk
- 1 tbs Coconut oil
- Veggies - 1x zucchini, 1x red capsicum, handful of green beans
- 1x Chicken breast
- 3x serves vermicelli noodles
- 1x tin Water chestnuts
- fried shallots - to garnish
Method
- Chop up all veg and chicken
- Heat wok and then add 2 tbs of coconut oil
- Fry off Laksa paste for 1 min (whole jar)
- Add 2 tbs of red curry paste and chicken to wok, then cook on high for 2 minutes
- Add 1/2 tin of coconut milk to wok and let simmer for 5 minutes
- Cook vermicelli noodles in hot water for 10 minutes
- Add all veg and rest of coconut milk to wok and let simmer on low for 15 min
- Serve over noodles and garnish with fried shallots to finish
